Eggplant and Feta Spaghetti Recipe

Ingredients
- 2 1/2 cup eggplant
- 3/4 tsp salt
- 1/4 cup oil
- 1 Tbsp garlic
- 1/2 can diced tomatoes, canned (411g)
- 1 pouch DEL MONTE Italian Style Spaghetti Sauce (500g)
- 3/4 cup water
- 1/2 tsp salt
- 1/4 tsp pepper, black
- 2 tsp sugar, white
- 1 pack DEL MONTE Spaghetti (400g)
- 1/2 cup feta cheese
- 2 Tbsp basil, fresh

Procedure
1 Combine the eggplant and salt in a bowl. Let stand for 15 minutes. Drain the excess liquid from the eggplant. Fry the eggplant in oil until golden brown. Remove the eggplant and set aside.
2 In the same pan, sauté the garlic until aromatic. Add the diced tomatoes and cook for 2 minutes. Add the DEL MONTE Italian Style Spaghetti Sauce, water, salt, pepper, and sugar. Simmer for 3 minutes. Add the cooked eggplant. Toss in the cooked DEL MONTE Spaghetti.
3 Plate the pasta and top with crumbled feta cheese and shredded basil. Serve.
